- 1 1/2 cups cornmeal
- 1/2 cup organic all-purpose or gluten free flour
- 2 tsp baking powder
- 1 tsp sea salt
- 1/2 tsp baking soda
- 2 eggs
- 1 cup buttermilk or soy milk
- 1/4 cup grapeseed oil
- Preheat oven to 400-degrees F.
- Combine wet ingredients, salt, baking powder, and baking soda. Whisk until well combined. Slowly add dry ingredients and whisk to a consistency that is thin enough to go through a slotted spoon but not too watery. Add water if the mix is too thick. Pour mixture into skillet.
- Bake for 20-22 mins.
A cast iron skillet is preferred, but any well-oiled, 10” baking vessel of your choice will work.
