Fruit Salad with Mint Sauce
- 2 pineapple, papayas and/or melons
- 1 lb berries and/or grapes
- 2 limes, juiced
- 1 inch piece of ginger root, peeled and grated
- 1 tbsp local honey
- 5 fresh mint leaves, finely chopped
- Cut fruit into bite-sized pieces.
- In a large bowl, combine lime juice, ginger, honey and mint.
- Add fruit and toss well.
- Set in a cool place to marinate for 1 hour or up to 24 hours.
