Anytime Frittata

Ingredients

  • 2 whole eggs
  • 4 egg whites
  • 1 pinch turmeric (optional)
  • 1/2 medium onion, chopped fine
  • 1 tbsp chicken or vegetable broth
  • 3 cloves garlic, chopped
  • 2 cups zucchini, thinly sliced
  • 1 cup spinach
  • 1 small tomato, chopped (Remove excess pulp)
  • 2 tbsp cilantro or parsley, chopped
  • sale and pepper to taste

Directions

  1. Chop onions and garlic and let sit for at least 5 minutes to enhance their health-promoting properties.
