Black Bean Pumpkin Chili

Ingredients
- 2 tbsp olive oil
- 1/2 medium onion, diced
- 1 red bell pepper, diced
- 2 cloves garlic, chopped
- 3 cups vegetable broth
- 3 cans black beans, drained and rinsed
- 1 can pumpkin puree
- 1 can diced tomatoes
- 2 tsp ground cumin
- 1 tsp chili powder
- 1 tsp paprika
- 1 tsp dried parsley
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1/2 tsp dried thyme
- sea salt & pepper, to taste
- fresh cilantro or parsley, to garnish
Directions
- Heat olive oil inĀ a large pot over medium heat. Add onion and bell pepper and cook until soft, approximately 2-3 minutes. Add garlic, stir and cook another minute.
- Add remaining ingredients and mix well. Bring chili to a simmer.
- When simmer is reached, reduce heat and cover. Cook at least 25 minutes, stirring occasionally.
- Garnish with your favorite fresh herbs, yogurt, cheddar cheese or avocado!
