Black Bean Pumpkin Chili

Ingredients

  • 2 tbsp olive oil
  • 1/2 medium onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, chopped
  • 3 cups vegetable broth
  • 3 cans black beans, drained and rinsed
  • 1 can pumpkin puree
  • 1 can diced tomatoes
  • 2 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp dried parsley
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • sea salt & pepper, to taste
  • fresh cilantro or parsley, to garnish

Directions

  1. Heat olive oil inĀ  a large pot over medium heat. Add onion and bell pepper and cook until soft, approximately 2-3 minutes. Add garlic, stir and cook another minute.
  2. Add remaining ingredients and mix well. Bring chili to a simmer.
  3. When simmer is reached, reduce heat and cover. Cook at least 25 minutes, stirring occasionally.
  4. Garnish with your favorite fresh herbs, yogurt, cheddar cheese or avocado!
