Blueberry Vinaigrette

  • 1/4 cup apple cider vinegar
  • 1/4 cup blueberries
  • 1-2 tbsp apple juice (or water)
  • 1 tbsp minced red onion (or substitute dried onion)
  • 1/2 tsp dried thyme
  • 1/2 tsp maple syrup
  • sea salt and pepper, to taste


  1. Puree all ingredients in a blender until smooth, thinning with apple juice (or water)

    to reach desired consistency.

  2. Drizzle over salad, or try it on baked or grilled chicken.
  3. Refrigerate in an airtight container up to 4 days.
