BYG Buckwheat Porridge

Ingredients

  • 1 cup buckwheat groats (rinsed)
  • 1 cup water
  • 1 cup almond or coconut milk
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • blueberries
  • pomegranate seeds
  • honey

Directions

  1. In a small pot, add rinsed buckwheat groats, water, milk, cinnamon, and vanilla
  2. bring to a boil, then reduce to a simmer and cover with a lid
  3. simmer for 10 minutes
  4. turn off head and let it sit, covered, for an additional 5 minutes
  5. fluff with a fork and portion into bowls
  6. top with fruit and a drizzle of honey
