Creamed Kale

Ingredients

  • 1/2 cup vegetable broth
  • 1 white onion, finely chopped
  • 1 cup soy, almond or goat milk
  • 1/4 cup raw cashews
  • 2 tbsp nutritional yeast
  • 1 tsp onion powder
  • 1 tsp miso
  • 1 pinch nutmeg
  • 1 pinch red pepper flakes
  • 1 cup kale

Directions

  1. Heat broth and cook onion.
  2. Transfer to blender: soy milk, cashews, yeast, onion powder, miso, nutmeg, and pepper flakes and puree.
  3. Transfer to skillet and simmer. Add kale until tender.
