- 1/2 cup vegetable broth
- 1 white onion, finely chopped
- 1 cup soy, almond or goat milk
- 1/4 cup raw cashews
- 2 tbsp nutritional yeast
- 1 tsp onion powder
- 1 tsp miso
- 1 pinch nutmeg
- 1 pinch red pepper flakes
- 1 cup kale
- Heat broth and cook onion.
- Transfer to blender: soy milk, cashews, yeast, onion powder, miso, nutmeg, and pepper flakes and puree.
- Transfer to skillet and simmer. Add kale until tender.
