Fruit Salad with Mint Sauce

Ingredients

  • 2 pineapple, papayas and/or melons
  • 1 lb berries and/or grapes
  • 3 limes, juiced
  • 1 inch piece of ginger root, peeled and grated
  • 1 tsp local honey
  • 5 fresh mint leaves, finely chopped

Directions

  1. Cut fruit into bite-sized pieces.
  2. In a large bowl, combine lime juice, ginger, honey and mint.
  3. Add fruit and toss well.
  4. Set in a cool place to marinate for 1 hour or up to 24 hours.
