Healthy Stir Fry in a Flash

Ingredients
- 2 tbsp grapeseed oil
- 1 tsp toasted sesame oil
- 1 cup scallions (chopped)
- 2 tbsp fresh ginger (minced)
- 2 skinless, boneless organic chicken breasts (cut into bite-sized pieces)
- 1 1/2 cups fresh shiitake mushrooms (sliced)
- 4 cups bok choy (chopped)
- 2 tbsp soy sauce, Bragg’s Liquid Aminos, or tamari
- 1 tbsp rice vinegar
- salt and pepper to taste
- pinch of red pepper flakes (optional)
Directions
- Heat grapeseed oil on medium high heat and cook chicken for 5 minutes
- Add ginger and continue to sauté for another minute
- Add sesame oil, shiitake mushrooms, and bok choy
- Continue to sauté for another 5 minutes, and then add soy sauce of choice, rice vinegar, salt, and pepper
- Serve over brown or basmati rice or riced cauliflower
