Healthy Stir Fry in a Flash

  • 2 tbsp grapeseed oil
  • 1 tsp toasted sesame oil
  • 1 cup scallions (chopped)
  • 2 tbsp fresh ginger (minced)
  • 2 skinless, boneless organic chicken breasts (cut into bite-sized pieces)
  • 1 1/2 cups fresh shiitake mushrooms (sliced)
  • 4 cups bok choy (chopped)
  • 2 tbsp soy sauce, Bragg’s Liquid Aminos, or tamari
  • 1 tbsp rice vinegar
  • salt and pepper to taste
  • pinch of red pepper flakes (optional)


  1. Heat grapeseed oil on medium high heat and cook chicken for 5 minutes
  2. Add ginger and continue to sauté for another minute
  3. Add sesame oil, shiitake mushrooms, and bok choy
  4. Continue to sauté for another 5 minutes, and then add soy sauce of choice, rice vinegar, salt, and pepper
  5. Serve over brown or basmati rice or riced cauliflower
