Mock Chicken Salad

Ingredients

  • 200 g tempeh
  • 2 tbsp vegan mayonnaise (Veganaise)
  • 1 celery stalk (finely chopped)
  • 1 small onion (minced)
  • 1 tsp mustard
  • 1 tsp soy sauce
  • 1 dash garlic powder
  • 2 tbsp fresh parsley (minced)

Directions

  1. Steam tempeh for 2 minutes and allow to cool
  2. Cut into cubes slightly smaller than 1/2 inch
  3. Combine with remaining ingredients and mix.
