Mock Chicken Salad

Ingredients
- 200 g tempeh
- 2 tbsp vegan mayonnaise (Veganaise)
- 1 celery stalk (finely chopped)
- 1 small onion (minced)
- 1 tsp mustard
- 1 tsp soy sauce
- 1 dash garlic powder
- 2 tbsp fresh parsley (minced)
Directions
- Steam tempeh for 2 minutes and allow to cool
- Cut into cubes slightly smaller than 1/2 inch
- Combine with remaining ingredients and mix.
