Ya Ya Vegetable Soup

- 1 can fire roasted tomatoes
- 6 cups vegetable broth
- bell pepper
- kale (escarole or spinach)
- fresh thyme and marjoram
- red pepper flakes
- salt and paper for flavor
- white beans or protein
Saute onion and fennel in olive oil for 1 minute.
Add bell peppers, zucchini, and garlic and continue to cook for 30 seconds more.
Add canned tomatoes, broth, herbs and beans and bring to a boil.
Add greens and reduce heat to a simmer for 15-20 minutes.
